Eat Healthy – Live long, Live strong
The vast majority of food bloggers are currently posting fall-inspired recipes, many of which feature pumpkin puree. I know it must be torturous for those of you who still cannot track down cans of pumpkin puree where you live, so I thought I’d post a tutorial for how to make your own! Start with “sugar”…
Have you tried Trader Joe’s Cocoa Almond Spread? It’s basically an almond version of Nutella, and although it’s suuuuuper sweet, it is pretty delicious… in small amounts. By now you must know how much I adore desserts, but this spread on its own is almost too sweet for my palate (I know, I know… I also…
These photos are probably incentive enough for you to make this single-serving lava cake… but I have just a few things to write about it. However, I won’t hold it against you if you scroll straight down to the recipe so you can make it rightthissecond. I probably would. First off: peanut flour. High protein. Low…
Yesterday’s forecasted rain turned into heavy large-flaked snow, so I wanted to make something warm and comforting for lunch. Grilled cheese & tomato soup fit the bill, but I wanted to amp up the classic sandwich a bit. I also wanted Lily to be interested in and be able to eat what I was having,…
I had several recipes for carnitas sitting in my “pork recipes to make” folder, and instead of tackling the difficult task of choosing between them, I decided to come up with my own. Name: Carnitas (Pulled Pork Tacos) Cuisine: Mexican Prep Time: 20 minutes Cooking Time: 8 hours Total Time: Approximately 8 hours 20 minutes…
Yep. That’s right. Toasted marshmallow. Ice Cream. I couldn’t let National Ice Cream Month pass by without an indulgent summer treat. No, this recipe isn’t healthy – but we all deserve a splurge every now and then, right?! I’m pretty sure the idea of combining toasted marshmallows with ice cream originated with Spike Mendelsohn (of Top Chef fame). I was first introduced…
This is the lighter, airier, less decadent version of my Chocolate Ganache Pudding. Still chocolaty, still vegan, still delicious… but made with sweet potato puree instead of avocado and coconut butter. I took advantage of the inherent sweetness of the potatoes, adding in just a bit of maple syrup. Vanilla extract and espresso powder enhance the…
Disclaimer: I am not touting these cookies as health food, because they aren’t particularly light or nutritious. Although I did use natural unsweetened peanut butter, a moderate amount of unrefined sugar, and sandwich cookies void of artificial ingredients & hydrogenated oils, this recipe leans further towards the category of “living to eat” rather than “eating to…

I’m officially hooked on vegan ice cream. Who knew that a non-dairy treat could be so rich, creamy, and satisfying? Well, I guess Wheeler Del Toro did – and I am forever indebted to him for introducing me to a lower-calorie & lower-fat version of a classic dessert. There are tons of choices when it comes to…
December 1st. Wow. It feels like Summer was just yesterday… but I’m welcoming Winter with open arms. Fall in New England lasts only for the blink of an eye; though we had a handful of unseasonably warm days over the past month, the temperature has now dipped and it is really starting to feel like…
