  • 2 cups cooked chicken breast, diced
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup sweet pickle relish
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 8 slices of your favorite bread
  • Lettuce leaves and tomato slices for garnis

Step 1: Prepare the Chicken

Start by cooking your chicken if you don’t already have cooked chicken on hand. You can either poach it, grill it, or even use rotisserie chicken for convenience. Once cooked, let it cool, and then dice it into small, bite-sized pieces.
