Does it feel like summer where you live?
The really hot weather has yet to descend upon New England for the season, but this Memorial Day weekend is actually forecast to be pretty warm. After what feels like day after day of cool rainy days, I’m welcoming the sunshine with open arms and this refreshing cooler is the perfect way to ring in the unofficial start of summer.
Simply a strained puree of sweet juicy watermelon and crisp cool cucumber, this agua fresca-like beverage is an ideal antidote to a hot day.
Watermelon is a staple in my summertime diet, and apparently I’ve started early this year because I can’t seem to get enough of the delicious fruit. I can easily put away a few big bowlfuls of chopped watermelon in one sitting… I mean it is mainly water, right?!
Feel free to play around with the ratio of watermelon to cucumber to suit your taste preference. Regardless, I hope you find this cooler as delicious and refreshing as I do!
Watermelon & Cucumber Cooler

Prep Time: 5 minutes
Cook Time: 0 minutes

Ingredients (2 small servings)
- 2 cups cubed seeded watermelon
- 3/4 cup chopped peeled english cucumber
Instructions
Combine watermelon and cucumber in a blender; blend until very smooth.
Place a fine mesh strainer over a large bowl or pitcher; pour mixture through sieve and collect the liquid. Discard any solids left in the sieve.
Serve ice-cold.

Yes it is summer now here, hot and humid and only fruits such as watermelon can provide some relief. There is no alternative to watermelon during summer.

It’s extremely hot where I live, so I can definitely use a drink like this right about now. I’ve never thought about adding cucumber to my fruit shakes, but it looks amazing!
Just tried this and it is AMAZING. Cucumber and watermelon sound like strange bedfellows, but when whirled in the blender and poured in a tall glass they have great chemistry. It was good with a splash of ginger ale too, but I think Sprite or Sierra Mist might play better with the light, fresh flavors. The thinner your cukes are, the less need there will be for straining out the seeds.
