Summer Eatin’

Sure, we technically have a few more weeks before the official commencement of summer… but lately the majority of my diet has revolved around summery foods.

Here are some of my favorites from last year!

Who says soup has to be hot? This Chilled Avocado Soup – garnished with roasted corn – is a lovely meal for a warm day. Rich & creamy but light, this soup can easily be either an appetizer or entree.

Cherries are one of my favorite fruits, and despite the high price tag for the organic variety, our fridge is almost always stocked throughout the summer months. Try ’em in this tasty Cherry, Arugula, & Quinoa Salad with Goat Cheese and Almonds

…. or in a sandwich such as this delectable Peach, Cherry, and Brie Panino.

Berries are another summer staple for me, and they shine in this stack of Blueberry Cornmeal Pancakes for One.

If it’s too hot where you live to even think about turning on the oven or stove, check out this Raw Corn Salad with Cumin Lime Dressing. Yep, raw corn. If you haven’t tried it, consider this salad your incentive!

  1. Mmmmm cherries and berries! We both worked on a fruit farm for four years, so we are definitely all over the farm-fresh fruits! We love salads in the summer (though we eat them all winter, too!) and grill just about everything. Burgers, fruit, chicken, veggies, pizza… yum:)

  2. that raw corn salad is the bomb. i saw it on here a while ago and make it all the time. d.e.l.i.c.i.o.u.s.
    …and sometimes when i have other ingredients on hand (cherry tomatoes, black beans) i throw them in, too.)

  3. I haven’t had them in forever, but I loovvee cornmeal pancakes! I’ll have to make them sometime soon! My favorite summer foods are brats, potato salad, fruit salad, sweet corn, and iced tea!

  5. Your cherry – quinoa recipe looks amazing! We just got into quinoa this year and had never thought about putting cherries in it. Can’t wait to try it!
    My favourite summer time food has got to be watermelon. I want to try using it in a different way this year. I even saw a recipe on pinterest using it as an appy with balsamic vinegar and cheese. Actually think it might be good!
