Monday Musings + Zucchini Coleslaw

1. For the next week, we will be at the beach with John’s family ringing in the unofficial end of summer. I do have a recipe planned to share with you, but I’d also like to post some photos of our vacation!


2. I posted this on Facebook last week, but it bears repeating:

Apparently – according to The Today Show, at least – it’s legal for food manufacturers to be 20% off on the caloric information of packaged products. In other words? Those low calorie snack foods you love might not be such a smart choice after all… Just one more reason to eat WHOLE foods!


3. My latest song obsession is Jason Mraz’s “I won’t give up“. We’ll see just how many times I can play it on repeat per day until I’m sick of it.


4. As a lighter alternative to the typical fat-laden coleslaw, I’ve come up with this healthier – and tastier! – slaw featuring zucchini. Check out my Zucchini Coleslaw for a different take on a cook-out classic for Labor Day.

  3. Caloric information can be 20% off? That’s horrible! I guess that puts a damper on trying to count calories. This zucchini coleslaw recipe looks delicious. I’d love to try it, but I’m lactose intolerant and can’t have anything with yogurt in it. Can you recommend a substitute dairy-free ingredient?

    1. Hm… you could try out a vegan “mayo” such as Nayonaise or a dairy-free plain “yogurt” such as WholeSoy or So Delicious Coconut Milk Greek Yogurt. I can’t speak for how these substitutions will taste in the coleslaw, but they’re definitely worth checking out!
