Monday Musings + Sweet Potato Zucchini Vichyssoise, revisited

1. I just finished the last episode of Friday Night Lights on Netflix streaming (via Apple TV) and there is a hole in my heart that won’t easily be filled. It was – without a doubt – one of my favorite series ever, and I’m not even a big football fan! Why oh why did it have to end after just 5 seasons?!

At least they brought Tim Riggins back for the last few episodes… the show just wasn’t the same without him. And yes, I WILL be watching John Carter so I can get my Taylor Kitsch fix.




2. Although it went undocumented (I apologize for that) I most certainly did partake in celebrating Cinco de Mayo with a Mexican meal. I made a sweet potato & black bean quesadilla with guac and it was to. die. for.




3. My parents are traveling in Italy for two weeks, and their Bichon is staying with us. Needless to say, it’s been a little wild in the apartment (I can’t wait to move into our house in a month!!) what with two dogs and a cat, but they all get along and Zach is a great little cuddler (much to the chagrin of Shelby, who can get pretty jealous).

  1. Loved Friday Night Lights! Haha, I remember feeling the exact same way when they brought Tim back…I just missed Matt (he was always my favorite in a dorky way). :)

    I made the Mahi Mahi fish tacos yesterday, and they were AMAZING!!!!!!!! Everyone in the house devoured them. Thanks for such a delicious recipe. Next I will be making your tart frozen yogurt, without an ice cream maker. :-)
