Monday Musings + Butternut Squash Soup

1. I was excited to try Trader Joe’s brand-new Pumpkin Macarons, but was unfortunately pretty  disappointed. The cookies come frozen, so you have to thaw them before eating… the process of which negatively affects the texture in my opinion. The flavor was also off (perhaps because they use turmeric for coloring?!).

If you now have pumpkin macarons on your mind, allow me to steer you towards a recipe for a homemade version that looks fabulous!

 

 

2. Another gustatory disappointment I’ve had recently from Trader Joe’s is their pumpkin greek yogurt. The thick & creamy consistency is there, but again the flavor just wasn’t spot on for my taste buds.

I think I’ll stick to mixing my own pumpkin yogurt by combining plain greek yogurt, pumpkin puree, a bit of maple syrup, and warm pumpkin pie spices (cinnamon, nutmeg, cloves, ginger, & sometimes allspice).

 

 

3. The fall foliage here is a bit behind schedule, but I think we’re just about at the height of the color. Here are a couple of photos I snapped with my iPhone on a gorgeous hike I took with Shelby yesterday morning.

It seems that every year the vibrantly-hued leaves fall in the blink of an eye, so I’m making a concerted effort to fully appreciate the beauty each day.
