Monday Musings + Butternut Squash Soup

1. I was excited to try Trader Joe’s brand-new Pumpkin Macarons, but was unfortunately pretty  disappointed. The cookies come frozen, so you have to thaw them before eating… the process of which negatively affects the texture in my opinion. The flavor was also off (perhaps because they use turmeric for coloring?!).

If you now have pumpkin macarons on your mind, allow me to steer you towards a recipe for a homemade version that looks fabulous!

 

 

2. Another gustatory disappointment I’ve had recently from Trader Joe’s is their pumpkin greek yogurt. The thick & creamy consistency is there, but again the flavor just wasn’t spot on for my taste buds.

I think I’ll stick to mixing my own pumpkin yogurt by combining plain greek yogurt, pumpkin puree, a bit of maple syrup, and warm pumpkin pie spices (cinnamon, nutmeg, cloves, ginger, & sometimes allspice).

 

 

3. The fall foliage here is a bit behind schedule, but I think we’re just about at the height of the color. Here are a couple of photos I snapped with my iPhone on a gorgeous hike I took with Shelby yesterday morning.

It seems that every year the vibrantly-hued leaves fall in the blink of an eye, so I’m making a concerted effort to fully appreciate the beauty each day.

  1. I just made my own pumpkin greek yogurt this morning and was thinking, I wonder if the TJ”s brand is much better? Haha, good to know I’m not missing much.

  2. As a pumpkin lover, I too was very disappointed with TJ’s greek yogurt. I actually thought I had gotten one without the flavoring, it was so tart. And was it just me or did that seem like a LOT of yogurt? I guess I wouldn’t have noticed if it actually tasted good. I’ll just stick to their pumpkin pancakes (:

  3. I’m also a huge fan of pumpkin, but I hated TJ’s greek yogurt. I even tried using it in a smoothie, but no matter what I added, I could not improve or mask the flavor.

  4. I’ve never been to Trader Joe’s. It’ll probably be my first stop when I go back to Texas (because they finally opened some places there!) It seems like a wonderland. But I’ll be sure to stay away from their Greek yogurt. :)

    Fall over there must be amazing! Hope it’ll last longer than expected.
