Blender Eggnog Latte

Eggnog: love it or hate it? It seems people fall at either end of the spectrum when it comes to the rich, creamy, seasonal beverage. I love it, but only in small amounts a few times during the holiday season. I personally think eggnog is delicious all on its own, but it also lends itself well to a wide array of beverages and baked goods. While decorating our tree, I spiked mine and John’s with Kahlua, and I’m carrying the coffee trend over to this blender latte!

Steamed milk and eggnog team up with instant espresso powder in the blender to create this frothy, slightly sweet coffee treat. It’s a super easy, relatively healthy (in comparison to the equivalent from a coffee shop), and fun way to enjoy eggnog this holiday season.

Blender Eggnog Latte

Prep Time: 2 minutes

Cook Time: 1 minute

Ingredients (1 serving)

  • 3/4 cup 1% milk, preferably organic
  • 1/4 cup low fat eggnog, preferably organic (such as Horizon)
  • 1 tsp instant espresso powder
  • whipped cream and ground nutmeg for topping, optional

Instructions

Heat milk and eggnog until steaming (via stovetop or microwave).

Combine hot milk, eggnog, and espresso powder in a high-speed blender, such as a Vitamix.

Blend on medium-high speed (8 on the Vitamix) until frothy, about 30 seconds.
