Winter Storm Juno is currently wielding her wintery power over New England, and we’re hunkered down staying cozy inside while the snowy wind blows. My inner child is thrilled at the feet of snow accumulating outside, as this is the first big snow storm we’ve had this winter.

On a morning like this, a hot & comforting breakfast is an absolute must, and these pancakes fit the bill perfectly. A snap to prepare, healthy, and delicious, this stack of ‘cakes needs to make an appearance on your table ASAP!

Blend & Pour Apple Cinnamon Pancakes {Wheat-Free, No Sugar Added}

Ingredients (1-2 servings)

  • 1/2 medium-sized banana, peeled
  • 1/4 cup unsweetened applesauce, preferably organic
  • 1 large egg, preferably organic
  • 1/4 cup oat flour (I used Bob’s Red Mill; for a gluten-free version, grind certified gluten-free oats in a food processor or high speed blender until a fine flour forms)
  • 1/4 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1/2 large apple, peeled & coarsely grated
  • vegetable oil or butter for frying


Combine banana, applesauce, and egg in a blender. I like to use my immersion blender with its accompanying blender cup. Blend until smooth.

Add in oat flour, baking powder, and cinnamon. Pulse a few times until combined. Do not overmix. Stir briefly with a spoon or fork if needed. A few lumps are okay. Stir in grated apple. Set aside.

Heat a bit of oil or butter in a large nonstick skillet over medium-high heat.

Pour desired amount of pancake batter into skillet and cook until bubbles begin to form on the surface of the pancakes and the bottoms turn golden brown, about 1-2 minutes. Flip and cook until the other side is golden brown, about 1 minute.
